The cutting boards in this collection are made from end-grain wood. The end grain is exceptionally robust, wear-resistant, and therefore the hardest side wood has to offer. This side of the wood is used, for example, as a chopping block for splitting wood.
With end-grain cutting boards, the knife glides smoothly over the wood surface, penetrating only very lightly and barely perceptibly. This prevents damage to the wood fibers because they stand upright, like a brush. End-grain wood is extremely durable and gentle on knives.
